Monica Luby, M.S., R.D.N, F.A.N.D is a Registered Dietitian Nutritionist, Fellow of the Academy of Nutrition and Dietetics, and faculty member at Saint Elizabeth University, where she teaches in the Nutrition, Exercise and Health program. With more than 30 years of experience in higher education, Professor Luby has dedicated her career to preparing future nutrition and health professionals through excellence in teaching, mentorship, curriculum development, and accreditation leadership. Throughout her career, Professor Luby has served in leadership roles including as Dietetic Internship Director and Didactic Program in Dietetics (DPD) Director. She is committed to preparing graduates for success in nutrition and dietetics practice.

Professor Luby has been recognized for her contributions to nutrition and dietetics education through numerous honors, including the New Jersey Academy of Nutrition and Dietetics Emerging Dietetics Leader Award, Outstanding Dietetics Educator Awards for both Dietetic Internship and Didactic Program leadership, the 2024 New Jersey Academy of Nutrition and Dietetics Outstanding Dietetics Leader Award, and the 2024 Saint Elizabeth University Distinguished Teaching Award.

Professor Luby earned a Bachelor of Science in Food, Nutrition and Business from Kansas State University and a Master of Science in Clinical Nutrition from New York University. She also completed postgraduate coursework in Medical Humanities at Drew University.

Professor Luby is passionate about helping students recognize their unique talents and develop the knowledge, self-discipline, confidence, and professional judgment needed to succeed as Registered Dietitian Nutritionists. She believes that meaningful learning occurs through mentorship, experiential learning, and opportunities that challenge students to grow into compassionate, evidence-informed practitioners and future leaders in nutrition and healthcare.
