Dr. Medunick joined SEU in 2021 as a Clinical Faculty Preceptor in the Dietetic Internship program, where she guided dietetic interns through medical/surgical and nutrition support rotations at Morristown Medical Center. She has since transitioned to classroom instruction for the Graduate Program in Entrepreneurial Nutrition at SEU, where she teaches courses including Health Promotion Across the Lifespan, Program Planning and Design in Community Nutrition, Nutrition Assessment, and Clinical Nutrition Care.

With more than 25 years of experience as a clinical dietitian in acute care and long-term care/rehabilitation settings, she holds a Doctorate in Clinical Nutrition from Rutgers University and completed a LEND fellowship in interdisciplinary, family-centered care for individuals with intellectual and developmental disabilities as part of her training. She is passionate about teaching and mentoring the next generation of registered dietitians and advancing the profession. Her professional interests include assessment and treatment of malnutrition, nutrition focused physical assessment and examination, and nutrition for individuals with disabilities.

She is a member of the Academy of Nutrition and Dietetics, the New Jersey affiliate (NJAND), and Nutrition and Dietetic Educators and Preceptors. She currently serves as the Region 3 co-chair for NJAND, helping to plan continuing education sessions for members.
